Our Hors d’Oeuvre Menu features a large variety of delicious food for any occasion. Whether you’re planning a Wedding Reception, Office Gathering, Shower, or Cocktail Party, you can customize the perfect menu to please your guests.

All of our Hors d’Oeuvres are hand-made by our staff, using only the freshest vegetables and fruits, and the finest cuts of meats. Your Hors d’Oeuvre choices will be elegantly displayed at your event using our display pieces, display cloths, chafing dishes, and platters.

At Tyner’s Catering, we use only Professional, Experienced servers in order to make your event a success. Dressed in formal black and French Blue attire, our staff will not only compliment your event but also see to your guests’ every need, both maintaining the food tables as well as performing a complete cleanup afterwards.


Meats

CAJUN PORK LOIN W/PINEAPPLE AND BROWN SUGAR GLAZE

Marinated and seared to perfection, our Cajun pork loin is cooked in Cajun spices and glazed with a marinade of Pineapple Juice, brown sugar, and honey.

SLICED ROAST BEEF
Marinated and Slow-Cooked, this Delicious inside round is great for our medallion-sized dinner rolls and served with BBQ, honey mustard, and horsey mayo.

ITALIAN MEATBALLS
Hand-Rolled meatballs made from seasoned ground chuck and slow-cooked in our Homemade Marinara Sauce.

SWEDISH MEATBALLS
A Rich, Cream Sauce with a zesty parmesan flavor combined with our Hand-Rolled seasoned Meatballs.

CAJUN CHICKEN TENDERS WRAPPED IN BACON
Petite chicken tenders marinated and cooked in our own Cajun sauce then wrapped and baked with hickory smoked bacon.

BUFFALO WINGS
These wings can be ordered in a variety of glazes; Tequila Lime, teriyaki, honey barbeque, or seasoned breading. A traditional party favorite.

BREADED CHICKEN FINGERS
Crispy breaded chicken tenders delicately fried and lightly seasoned. Chicken tenders come complete with a variety of dipping sauces, including barbeque, honey-mustard.

CAJUN BAKED TURKEY

This traditional dish is suitable for any season. Slow-Baked, then hand-picked off the bone and separated into dark and white meat. Served with dipping sauces.

CHEESEBURGER PETITES
Petite, hand-made beef patties, cheese slices, and served up in a freshly baked yeast bun. Served with mustard, ketchup, and sweet Dill pickles.

CARIBBEAN SPICE CHICKEN TENDERS
Chicken tenders that are marinated in a jerk seasoning, combined with sautéed red and yellow peppers and spices. Beautiful and delicious.

HOT CHICKEN CASSEROLE
Our most requested dish. This chicken dish is made with roasted almonds, cheddar cheese, sautéed onions and celery and some great spices.

MEDITERRANEAN CHICKEN SALAD
Chunky chicken salad made with almonds, spices, and red and white grapes. Served with mini croissants.

CAJUN JAMBALAYA
This New Orleans dish is made with chicken, Conecuh sausage and rice. Just enough spice, but not too much.

BAKED LAMBCHOP LOLLIPOPS
Honey-glazed and roasted to perfection, these tasty chops give any menu an up-scale feel.

SESAME POLYNESIAN CHICKEN
Tangy and Sweet chicken tenders simmering in our own teriyaki glaze with a splash of sesame seeds.

GRILLED SAVORY KABOBS
Build your own with your choice of chicken, shrimp, or beef. Each mini kabob is complimented with red and yellow bell peppers, mushrooms, and pineapples.

CONECUH SAUSAGE MEDALLIONS
South Alabama conecuh sausage sauteed with red, green and yellow peppers and onions.


Seafood

CRAB CAKES WITH CRAWFISH JULIE
Fresh local crabmeat with red and yellow peppers mixed together and baked to a golden brown. Served with a delicious dark crawfish Julie sauce.

BACON WRAPPED SCALLOPS
Delicious Bay Scallops wrapped in hickory smoked bacon and baked. Enjoy the sweet taste of fresh scallops with a little saltiness of bacon.

MARINATED CRAB CLAWS
Fresh Blue Crab Claws marinated in a rich, creamy Italian Sauce. Colorful and tasty, a Mobile favorite.

SAUTÉED SHRIMP
Fresh Gulf shrimp sautéed in olive oil, fresh parsley, and fresh garlic. Served hot with tails on.

SEAFOOD CREOLE
This traditional Creole is cooked with the finest of spices and fresh Gulf shrimp and Cajun crawfish. A creamy tomato rue served on a bed of rice.

HOT CRAB DIP
A combination of crab, Swiss cheese, cream cheese, and spices, this delicious, rich crab dip is ladled over fresh homemade toast points.

SEAFOOD JAMBALAYA
Our traditional New Orleans Jambalaya but with Gulf shrimp, crawfish, crabmeat, and seafood base. A delicious addition to any menu, any event.

HOT SHRIMP DIP
A rich creamy blend of mozzarella cheese, cream cheese, and small Gulf shrimp. Served hot and ladled over toast points.

SEAFOOD GUMBO
The Best Gumbo in Mobile (we think so!) A dark, thick rue along with the finest combination of okra, tomato, crawfish, crab and shrimp. Served with rice.

PEELED BOILED SHRIMP
The perfect touch to any Gulf Coast wedding. Fresh local shrimp peeled with the tails on and displayed nautical pewter with zesty cocktail sauce for dipping.

BACON WRAPPED OYSTERS
Fresh local oysters wrapped in hickory bacon, lightly breaded with Panko crumbs and baked. Served hot.

GRILLED OYSTERS
Oysters on the half-shell, grilled on-site in savory garlic butter, and served right off the grill to your guests. An upscale treat for any occasion!

SEAFOOD PAELLE
Authentic Spanish rice dish. The distinct flavor of Sapphron is accented by fresh shrimp, crab claws, open-shelled clams, chicken, and fish. Very festive!

STUFFED MUSHROOMS
Medium Fancy mushrooms, stuffed with your choice of sausage, seafood, or our signature chicken salad. Baked until nice and tender and served hot.

HOT SPINACH ARTICHOKE DIP
Spinach and artichoke hearts, sautéed in wine and butter, combined with an Alfredo sauce is perfect for dipping with our tri-color tortilla chips or toast points.

SPINACH DIP
The traditional spinach dip that can be enjoyed almost anytime. Served with gourmet crackers.

PROSCIUTTO WRAPPED ASPARAGUS
Slightly steamed and lightly salted fresh asparagus wrapped with Mediterranean Proscuitto ham and garnished with red bell pepper strings.

GOURMET SEASONED BREADS
Fresh yeast rolls and homemade breadsticks, topped with Poppy Seeds, Garlic, and Parmesan Cheese.

FRUIT, VEGGIE, CHEESE DISPLAY
A popular display of 8 kinds of fruit with fruit dip, choice vegetables, and two types of cheeses. Beautifully displayed on glass, mirrors and greenery.

SPANAKOPITA
Traditional Greek spinach pie. A combination of spinach, onion, cheeses, and herbs enfolded in a flaky Phyllo dough.

BACON WRAPPED GREEN BEAN BUNDLES
Fresh green beans, bundled together and wrapped with hickory smoked bacon. Seasoned and baked crispy. A unique take on the traditional vegetable.

SUMMER STRAWBERRY SALAD
Greenleaf crown lettuce, sliced fresh strawberries, sliced almonds, and mandarin oranges mixed together for a colorful, lite salad. Served with raspberry vinegerette dressing.

PETITE FINGER SANDWICHES
A mix of honey-wheat and wheat sandwiches with your choice of chicken salad or pimento cheese. Cut into triangles without the crust, these finger sandwiches are a tasty menu addition.

MINI HAM AND CHEESE CROISSANTS
Honey Baked ham, swiss and pepper jack cheese added to petite croissants and baked to a flaky brown.

GOURMET CHEESE VARIETY
A variety of gourmet cheeses; Smoked Gouda, Pepper Jack, Colby, and smoked cheddar compliment any display.

STRAWBERRY CHEESE RING
This fantastic cheese appetizer is served with gourmet crackers and topped with a strawberry glaze and fresh strawberries. The perfect salty/sweet combination.

CARAMEL BRIE
Served with gingersnaps and baked in phyllo pastry with delicious sweet caramel sauce.

STRAWBERRY TREE
Your tree can be worked into our fruit display to add that final touch. A strawberry tree can also compli-ment any dessert station with our chocolate sauce.


Potatoes and Pasta

SERVE YOURSELF PASTA BAR
Your guests can enjoy making their own favorite pasta dish with Bowtie pasta, and their choice of creamy, Chicken Alfredo sauce or our rich, Crawfish Marinara with Parmesan cheese on the side.

RAINBOW PASTA
Our colorful spiral pasta in a creamy Italian dressing, topped with pimentos, black olives, and shredded carrots. Colorful and delicious.

SUN-DRIED TOMATO PASTA
Formal Bowtie pasta with a delicious Sun-Dried tomato glaze. Black olives and Italian seasonings complete this tasty pasta.

SEASONED BABY BAKERS
Baby Yukon potatoes, buttered and generously seasoned, sauteed with onion slivers and a smokey marinade, then pan seared to perfection!

MINI TWICED BAKED POTATOES
Roasted potato skins baked with sea salt and pepper and loaded down with our own Twice Baked Potato Casserole. Topped with grated cheese, sour cream and real bacon bits.

BEEF TENDERLOIN CANAPÉS
Perfectly seared and seasoned beef tenderloin, sliced and served with a creamy horseradish sauce served on French Baguette toast points, topped with pimentoes and a black olive half.

CUCUMBER DILL CANAPÉS
These cucumber canapés are made with a spicy cream cheese topping with fresh English cucumbers and topped with fresh dill. Served on a soft Honey Wheat bread round.

STUFFED CHERRY TOMATOES
The freshest cherry tomatoes stuffed with our very own chicken pecan salad.

HAM AND CHEESE PASTRY WRAP
Fresh ham slices and cheddar cheese baked in a pastry wrap and cooked to a golden, flakey brown. The look of a pastry purse.

SAUSAGE-STUFFED PASTRIES
Spicy, ground sausage, with cream cheese and cheddar cheese wrapped in Puff Pastry dough and toasted to perfection!

ROMA TOMATO AND BASIL CROSTINI
Fresh roasted Roma tomatoes sliced and mixed with fresh basil atop a lightly toasted toast point with fresh Mozzarella cheese. The perfect bite-sized appetizer.

SPICY CRAWFISH PASTRIES
Home-made pastry shells are filled with spicy crawfish and shrimp and mixed in a rich, creamy cheese sauce then baked. The perfect seafood bite!


For the Sweet Tooth ....

CHOCOLATE COVERED STRAWBERRIES
The ultimate treat! Fresh strawberries hand dipped in chocolate bark then swirled with white chocolate.

WHITE CHOCOLATE MOUSSE CUPS
Creamy white chocolate mousse poured into dark chocolate cups with shaved chocolate on the top.

KEY LIME TARTS
Delicious tangy key lime filing piped into chocolate cups, then swirled with key lime and raspberry glaze.

PETIT FOURS
The traditional formal dessert. A variety of these little cake bites compliments any menu. Chocolate fudge, red velvet, and spice cake are the perfect sweet satisfier.

BROWNIE BITES
Tasty homemade brownies cut into bite-size squares and drizzled with white mint flavored icing.

WHITE CHOCOLATE PRETZEL STICKS
Salty pretzel sticks dipped in white chocolate bark and drizzled in seasonal colors.


Food Stations

CARVING STATION
Compliment any reception or dinner party with the choicest cuts of meats professionally carved by one of our chefs. Choose from Beef Tenderloin, Inside Round Beef, or Cajun Pork Loin, each cooked to perfection. Each carving station comes with a variety of sauces including Honey Mustard, Horseradish Mayonnaise, and Demi-Glaze. Our Carving Station provides a truly professional look to your event and allows your guests a taste of fine cuisine. Choose a brown sugar ham with cheese biscuits for a twist on the original.

PASTA STATION
Bring a bit of Italy to your event as our chefs cook-to-order a variety of pasta dishes using only the freshest ingredients. We begin with our own simmering Alfredo and Marinara sauces and add Fresh Gulf Shrimp, Crawfish, or Italian Chicken, Spices, and Bowtie Pasta to create a dish your guests will definitely appreciate. Displayed in true “Old World” style, our Pasta Station is a great addition to any Hors d’Oeuvres Menu.

CANDY STATION
A Tyner’s Catering original! Our Candy Station is actually a deliciously edible display featuring a variety of candies flavorful colors. Yogurt-covered peanuts, Jelly Bellys, M & M’s, mints, and mounds of chocolate treats are beautifully displayed in a variety of glass decanters, vases, and martini glasses spilling out onto the table making for an explosion of colorful confections. Chocolate covered strawberries complete this station that promises to satisfy the sweet tooth in everybody.

MARTINI MASHED POTATO STATION
One of the most practical food stations around. We use only russett potatoes with plenty of butter and real heavy cream in our homemade mashed potatoes. Our potato station features a pyramid of martini glasses, mashed potatoes, real bacon bits, shredded cheddar cheese, and sour cream. This beautiful display gives any menu added fun as your guests will enjoy making their own spud creation.

SOUTHERN GRITS STATION
Creamy, buttery grits are the lastest in wedding receptions food stations. With similar looks of our potato station, Tyner’s supplies real martini glasses for an elegant look to this truly southern-born food station. Guests can enjoy making their grits creations topped with real bacon bits, cheddar cheese, and either crawfish julie or conecuh sausage medallions.
